Spiced Apple Baked Oatmeal

This healthy & tasty baked oatmeal just screams Fall!
Just slightly sweet and full of cinnamon and nutmeg flavors it's perfect to prep for the week.

Fall temperatures have finally hit the Midwest and that has me making all the usual Fall recipes, including this new one.

Everything apple, everything pumpkin and every soup I've been missing since last winter. It's quite possibly the best season for food in my opinion.

This week I wanted to feature another great apple recipe because you guys love them so.....my Spiced Apple Scones, my Apple Fritter Donut Bread, my Apple Cider Mini Donut Muffins....you get the picture. This time of year they are very popular.

I've always loved a baked oatmeal as it allows you to meal prep breakfast for the week. It keeps for many days in the fridge, it's hearty and filling and it's just a nice change up from the usual waffles, cereal, eggs, etc.

I love to grab a square, put it in a bowl, pour a splash of milk over it and then microwave it for 30 seconds. It creates this warm bowl of greatness each morning. 

And this version - it makes the house smell like warm apple pie - but thankfully it's healthier!

This batch of baked oatmeal makes 8 servings. Each square is just 300 calories, has 7 grams of protein and over 4 grams of fiber. It's a nice way to start your morning. I'll usually pair it with some yogurt or fresh fruit.

And coffee of course.

There is no need to peel the apples in this dish - leave them on! And if you have other fruit needing used up laying around go ahead and throw it in, peaches would be great, so would blueberries.

This baked oatmeal is soft and tender in the middle, yet has a slightly crispy top. The apples get soft as it bakes and the smell of cinnamon and nutmeg will fill your kitchen.

It's like baking an apple pie, but without all the work.

This breakfast dish is easy, tasty and perfect for busy weekday mornings. Take the 10 minutes of prep needed and your mornings can be a little easier.

  2. It must be a perfect fall breakfast! The combination of warm spices and apples makes it a great way to start a chilly morning. It’s always nice to have a recipe that feels like comfort food but is still pretty healthy. Last week, I got a subway email about a new sandwich, but this baked oatmeal sounds way better for a cozy morning at home. I’ll definitely be trying it out soon!
