Jiffy Cornbread Casserole

This easy peasy cornbread casserole starts with a Jiffy corn muffin mix.
Perfect for family dinners, especially during the holidays!

You know how every family has certain dishes that show up during the holidays? Well since becoming a Mom myself and most recently in the past 5 years or so, this cornbread casserole has become a staple for us.

I did not grow up eating it (unlike many Americans), somehow my own Mom missed the memo, but when my kids were a bit younger I tried this dish out on them and needless to say they LOVED it. As a Mom, I loved it too as it's just 6 ingredients, is incredibly easy to make and gets eaten up in seconds.

And if you want my honest opinion - it needs to become a staple on your holiday table too! The perfect pairing with turkey, ham, roast beef and the like.

Most ingredients for this dish will already be found in your pantry or fridge - you may just need to stock up on a Jiffy corn muffin mix and a can of creamed corn. That's about it!

In fact if you're like me (since we love this side dish so much) I try and keep both of those in my pantry at all times. That way I can whip it up pretty much any time of the year.

This cornbread casserole bakes up like a souffle - it's light, fluffy, almost sponge like. It's slightly sweet, yet retains the hearty cornbread flavor.

When I'm feeling extra I'll rub the top with a few pads of butter after it comes out of the oven and will set out a jar of honey for drizzling for those that want some extra sweetness. You can serve it warm straight out of the oven or it can be served at room temperature for your guests.

Which means it's the perfect dish to bring to any gathering! As it doesn't not have to be kept warm.
