You're a mean one Mr. Grinch, but you make a fun cookie!
These tender cookies melt in your mouth.
Our 10 year old loves The Grinch movie. I think we've watched each version 20 times! While watching it last week I got the ideas for these cookies.
For a few reasons - I thought the girls would love making them (they did) and because I knew they would really stand out on any Christmas cookie platter being green (and they do)!
There is not any green food coloring in these cookies - you're welcome! But rather two packets of instant pistachio pudding are in the cookie dough which give them their green color + give them a delicious pistachio flavor.
I often say pistachio pudding is the perfect balance of sweetness and nuttiness. It's subtle and not overpowering, with undertones of vanilla, pistachio nuts and almost an almond flavoring (even though no almonds are involved).
We love anything pistachio in this house!
The Grinch's heart plays a big role in the book and movie so I wanted to make sure and incorporate his heart into these cookies as well.
I ordered this small bottle of edible pink hearts (originally marketed for Valentine's Day desserts but they work good here too) and they were the perfect accessory to the green cookies. Just the cutest pink heart in the corner so people can make the connection to the story.

I've made two batches of these Grinch Cookies in the past week. They are that good! The family has announced they are a new favorite cookie.
They are soft, rich, sweet (white chocolate chips are inside) and just fun!
By the way - cookies freeze beautifully. I layer cookies in between parchment paper and keep them in airtight containers for at least a month before the holidays. This will keep them fresh.
