You'll often notice my January posts will have a certain theme - healthy and easy! I'm never one to give you complicated recipes, any time of the year, and today is the same. I've gathered 15 healthy and easy to prep-ahead breakfast recipes for you. Mornings are busy! So let's take a few extra minutes and prep some easy dishes that will make our grab-n-go mornings easier.

Peanut Butter Protein Muffins - this recipe contains no flour! It's sweetened with banana and gets its peanut butter flavor from dry peanut butter powder with has much less fat.
Overnight Breakfast Muesli Jars - have you ever had overnight oats? It's an easy way to make "oatmeal" in the fridge with a ton of healthy ingredients - oats, flaxseed, chia seeds, fresh fruits and more.
Loaded Healthy Freezer Friendly Breakfast Burritos - this egg scramble is loaded with spinach and red peppers and wrapped up in a low carb tortilla.
Double Chocolate Protein Balls - I make batches of these often, they are easy to pack in lunches or grab a couple with a piece of fruit when walking out the door.
Keto Pumpkin Pancakes - my friend Hilary sent me this recipe, who doesn't love a pancake? Made with almond flour, swerve brown sugar, pumpkin puree and basic pantry ingredients these are easy!
2 Ingredient Everything Bagels - these are amazing to have on hand to make a quick breakfast sandwich or spread with some mashed avocado. Just two main ingredients!
Healthy Applesauce Oatmeal Muffins - we love these! A simple muffin batter amped up with whole wheat flour and oats and sweetened with applesauce and honey.
Egg and Avocado Turkey Bacon Cups - grab a muffin tin and these are easy to prep. Turkey bacon gets wrapped around an egg, salsa and fresh avocado.
Healthy Breakfast Cookies - ever had a healthy cookie for breakfast? Now you can! These will remind you of your favorite oatmeal raisin cookie but without the guilt. Easy to prep a whole batch and keep in the freezer.
Brownie Baked Oatmeal - if you've never tried baked oatmeal, I'd highly recommend it! This chocolate version is full of all the good stuff. I keep it in the fridge during the week, reheating a piece topped with a splash of milk. So yummy!
Blueberry Yogurt Protein Waffles - this batter comes together in the blender and gets its protein from yogurt, oats and protein powder. These also freeze really well!
Healthy Greek Yogurt Oatmeal Pancakes - I like to make a double batch of these and freeze them for later. The protein is amped up with Greek yogurt and old-fashioned oats.
Pizza Egg Bites - a secret ingredient (cottage cheese!) really makes these egg bites swoon worthy. They remind me of the Starbucks version!
Healthy Peanut Butter Banana Bars - I make these bars all year long, sometimes for breakfast, sometimes for after school snacks. I keep them in the fridge for a cold treat.
