The way to anyone's heart is a good cookie.
This peanut butter version studded with mini peanut butter M&M's is a new favorite!
People often ask how I come up with my recipes and while there are a variety of ways, more times than not I'll see an ingredient in the grocery store and my mind just immediately thinks of a way to use it.
A couple weeks back I was strolling the candy section (always a bad idea!) and I noticed mini peanut butter M&M's. Now my go to weakness at concession stands of my kid's games are peanut butter M&M's, but up until this day I had never seen a mini version!
I quickly threw that bag in my cart.
I wanted these cookies to have double of the peanut butter flavor - and they do! Creamy peanut butter + the addition of the mini peanut butter M&M's. And the cookie dough batter is supreme - all brown sugar (gives them a deep, rich flavor), course sea salt (adds to the depth and brings out the sweetness) and good quality vanilla extract (because every cookie needs vanilla!).
And why should you chill your cookie dough?
I believe in refrigerating cookie dough for at least one hour before baking. This will prevent the cookies from spreading too much in the oven as the butter is cold going into the oven, versus already warm.
No one likes a paper thin cookie!
I used my large cookie scoop for these (my kids are always begging for BIG cookies, so I indulged them this time). You can grab the one I use here for under $10.
Then the trick to getting these cookies nice, big, semi-flat and symmetrical is to lightly push them down before baking with the bottom of a glass cup. This way they aren't dome shaped when they come out of the oven.
