Barbecue Chicken Pizza Rollups

Everyone loves pizza and these Barbecue Chicken Pizza Rollups are even more fun!

Great for parties and game day watching – the perfect hearty appetizer.

Our first recipe together this Spring comes just in time for March Madness and all of your game watching parties. Who doesn’t love a nice spread of appetizers to graze on while watching the big game?

And because I am who I am…. I’ve made this recipe super simple. You know I’m not a fan of complicated!


Store bought crust (I used a thin crust version), shredded rotisserie chicken, provolone cheese, Italian seasoning and Cookies Sweet “N” Spicy barbecue sauce.


We picked their Sweet “N” Spicy version because of it’s ample flavor and it’s unique way to be both sweet, yet give a little kick on the end. The hint of jalapeno adds just the right amount of heat and as they say – the flavor cannot be beat.

See how easy it is to roll this up?


It’s all a matter of just layering the ingredients (sauce, cheese, chicken, seasoning, more sauce), tucking in the side of the pizza dough, rolling up and pinching the seams together so it all stays tucked in.


Easy peasy!

Using a serrated knife, you’ll cut the pizza dough log into 8 pieces (the serrated knife has teeth on the blade so it slices easily through the soft dough without tearing it) and place them in a 9x13 baking dish.


The pizza dough will puff up while it bakes and the cheese will get nice and melty!

These pizza rollups are everything you love about traditional barbecue chicken pizza but in a fun little bite!


I had one straight out of the oven (couldn’t resist) and my kids grabbed them out of the fridge after school and gave them a quick reheat for the perfect after school snack. I always try and save new recipes to serve for dinner but with three hungry kids, they never make it past the hour they are home after school.
