Veggie Pizza Appetizer

This classic appetizer has been around for years, but my Veggie Pizza is a bit different.
This is a great dish to bring to parties!

Raise your hand if you've had some type of veggie pizza before....probably quite a few of you right? Many versions of this cold appetizer has been around for years. I feel like it was first introduced in the 1970's. Correct me on that if I'm wrong, but I definitely know it's been awhile.

And for good reason! It's easy to make and always a crowd pleaser. 

It's just one of those iconic party foods that shows up more often than not. It travels well and keeps in the fridge for a couple days.

To keep with my style, this wouldn't be a recipe if it weren't easy. Simple store bought ingredients are needed - Pillsbury crescent rolls, a dry ranch seasoning packet, cream cheese, mayonnaise, veggies and bacon (if you want that).

Simple as that!

The key to a great cold veggie pizza are a few things - a couple tips I once received from my aunt Marsha - who brought this to many, many family gatherings over the years.

First, chop the veggies up in a food processor to a really small texture. For my veggie pizza I always use carrots, broccoli and cauliflower. Those three work really well together, but I've also seen brussels sprouts, kale and sprouts.

When you get the veggies to a small, fine texture it layers on really well and is much easier to eat! No one wants to take a bite of a HUGE broccoli floret. Chop that stuff up!

Second, my aunt always added cooked bacon (also chopped up very fine). It just adds a salty and smoky bite. If you are a bacon fan I say go for it. If you are wanting to keep this all veggie, then simply omit - no biggie!

Per usual, my kids each had a slice after school - even the kid who HATES broccoli! I think the creamy layer of ranch cream cheese drew her in (big ranch fan) + the bacon.

I've had this in the fridge for a couple days and I've been seeing people just randomly grabbing a slice for a snack. Works this way or works to take to a gathering. Either way, people love it.
